Vegan S'mores

Happy World Vegan Day!

Our products feed your skin plant-based nutrients and essential fatty acids, and we believe strongly that a good diet, low in sugar and rich in veggies and healthy fats, is the foundation of truly beautiful skin.

Yet... who can resist a s'more? For our sweet tooth, there's hardly a dessert that brings back better childhood memories. The scent of campfire on our clothes and permission to stay up late was a salve for the soul. Glittering stars above elicited bigger questions about the universe and our place in it. S'mores are more than a dessert; they're a rite of passage.

Depending on where you live, there's still some good camping to be had this year. And if not camping, it's a great time to break out the backyard fire pit.

Our Vegan S'mores recipe has given a healthier, grown-up twist to all that gooey sweetness melted inside satisfyingly crunchy outsides and melty chocolate. The cookies sneak in some good fats, minerals, and plant-based nutrients, plus they’re chewy, gluten-free, and super easy to make. The marshmallows are completely vegan.

Vegan S'mores
(gluten-free)

2 cups almond flour

1/2 cup organic coconut oil (unrefined), melted

1/3 cup maple syrup

1/2 tsp. baking soda

1/2 tsp. vanilla extract

1 tsp. pink Himalayan (or sea) salt

Package of vegan marshmallows (we like these)

3/4 cup organic dark chocolate chips (if you want less sugar, choose a chocolate chip sweetened with monk fruit, such as Lakanto Sugar Free Chocolate Chips or Lily’s Stevia Sweetened Chocolate Chips)

Before beginning, heat oven to 350°F and line a cookie sheet with parchment paper.

Step 1: blend almond flour, salt, and baking soda in large bowl

Step 2: blend maple syrup, coconut oil, and vanilla extract in a small bowl

Step 3: add wet mixture to dry and mix with a wooden spoon until all ingredients are blended

Step 4: mix in chocolate chips

Step 5: spoon dough onto cookie sheet. Make sure cookies are big enough to hold a marshmallow between them

Step 6: bake for 10-12 minutes or until firm

Step 7:  Let cookies cool before using

Step 8: Toast your marshmallow over an open fire, then slide it between two of the cookies

Step 9: Get all the childhood nostalgia without all the sugar crash!

Happy World Vegan Day!  We hope your future includes these yummy treats along with many happy campfire sessions to come.
